I play around with a lot of chocolate and these turned out to be really fun. I'm going to share the basic how to make them, tips I learned, and lots of pictures. Before making them I watched a lot of YouTube video's and read a lot of blog posts. </span><p></p><p><span style="font-family: verdana;">First you need to find the molds. I bought these from Walmart online and they were shipped pretty quickly. I will try to find some that are just a little bit smaller. These do fit nicely in a cupcake liner and in the mug. </span></p><p><span style="font-family: verdana;">You only get one for that price. I bought three of them. You can find them on Amazon, but before purchasing check the shipping date. For this project I would suggest buying the Wilton candy melts, or almond bark. Wilton candy melts can be bought from Walmart, Joanns, Michael's and Hobby Lobby.</span></p><p><span style="font-family: verdana;">You can improve the flavor by adding some chopped up pieces of the large Trader Joe's chocolate bars. I ordered chocolate from Gygi's in Salt Lake City and I'm very happy with it. I bought a dark chocolate, white chocolate and a salted caramel.</span></p><p><span style="font-family: verdana;">One of the video's I watched she recommended cutting the molds to separate them. I would highly recommend this. I cut mine in sections of two. They are much easier to handle. You can pick them up to help spread the chocolate. </span></p><p><span style="font-family: verdana;">Another helpful tip is to put the molds in cupcake pans. The first ones I made I let the chocolate set while still in the pan. But now I find it works great to flip the molds upside down on parchment paper. I still use the pans while I'm filling the molds.</span></p><p><span style="font-family: verdana;">The trickiest part is removing the half sphere from the mold. It's really important to not crack the edges. If you do, just toss it back in your bowl and melt it back down. Stretch the mold a tiny bit from opposite sides to release it, then gently remove the chocolate.</span></p><p><span style="font-family: verdana;">I filled mine with Starbucks hot cocoa mix that mixes with milk. I will be trying another mix that mixes with water. Remember the chocolate ball adds a lot of flavor. 1 heaping TB cocoa mix is plenty. Add marshmallows of various flavors, crushed candy canes, Jr Mints, sprinkles, chocolate chips, caramel filled chocolate chips, what ever you want. </span></p><p><span style="font-family: verdana;">When ready to fill them, heat a small plate in the microwave and rotate the sphere on the plate to melt the edge, fill half, put the second sphere on the plate then attach together, gently twisting. You can add melted chocolate to the outside if you need to. </span></p><p><span style="font-family: verdana;">To use, just plop the ball in a large mug and pour a cup (or more) of milk over the ball. Then stir. <span style="font-family: "trebuchet ms" , sans-serif;">This is a great recipe. But you have to be patient. The mixed dough rests overnight. But it is well worth the wait to bake fresh pastries in the morning, after about a one hour rise time and short baking time.</span><br />

I wanted to record what's going on in the world so that years from now when I run across this recipe, I'll remember today.</span><br />

<span style="font-family: "trebuchet ms" , sans-serif;">Today is Monday, March 23, 2020. We, as in the entire world, is dealing with a novel virus to which we do not currently have a cure or a vaccination. People are dying. Entire countries have gone on lock down. It is called Coronavirus or Covid-19 for short. It is a respiratory disease that impacts the lungs. In Washington State as of 3/22 95 people have died, 90% of those who have died are over the age of 60. In our state we did get impacted from people returning sick from cruise ships and a break out in an assisted living facility. We are not on a state wide shut down, but are doing self quarantine where possible. People who can, are working from home, the schools are closed for about 6 weeks. I myself haven't been out in public since last Tuesday. Today I drove to 3 homes to drop off these delightful pastries on the door step, and hopefully brought a smile to them. </span><br />

Cut it in half and did sugar cinnamon on half and seedless strawberry jam (that's what I had) on the other half. I do have cream cheese on hand, but didn't want to make the cream cheese filling. Call me lazy, perhaps, or cutting a few calories. The cream cheese filling with the jam is really good. And messy.</span><br />

Add the meat and the frozen vegetables. Stir thoroughly. Let mixture come to a slow boil. Turn heat down to medium and left soup simmer for about 20 to 30 minutes stirring occasionally.</span><br />

<span style="font-family: "Trebuchet MS", sans-serif;">Use as much of the frozen vegetables and quinoa as you like. I found that half the package of the quinoa mix (about 1 C.), half the okra and most of the mixed vegetables worked best. Some mixed vegetable packs have beans in them which work well. You could also mix in some canned beans. Be creative with the vegetables.</span><br />

<span style="font-family: Verdana, sans-serif;">I recently made deviled eggs for a potluck at the office. They were a big hit. I think we all have childhood memories of them at picnics and potlucks. I know there is plenty of advice out there about how to boil the perfect egg. I will tell you my method which works for me.</span><br />
<span style="font-family: Verdana, sans-serif;"></span><br />
<span style="font-family: Verdana, sans-serif;">Fill a saucepan with water, set in eggs making sure eggs are completely covered and pan is large enough so the water does not boil over. I add a couple of extra eggs, just in case.</span><br />
<span style="font-family: Verdana, sans-serif;"></span><br />
<span style="font-family: Verdana, sans-serif;">Set pan on stove top on med high. Bring the water to a boil, turn heat down just a little bit. Maintain a slow boil for 12 minutes. Remove from stove and drain the hot water. Then run cold water over the eggs. Remove eggs from pan and put in a container and refrigerate until cool. </span><br />
<span style="font-family: Verdana, sans-serif;"></span><br />
<span style="font-family: Verdana, sans-serif;">When cool, peel the eggs. First crack the egg on the counter, then roll it. If you can find the one spot on the egg that has the air pocket start peeling there. That works well. Peel the shell off the best you can. I lay out paper towels. I peel the egg, rinse it off under cold running water, then set it on the paper towel to dry. I peel about 4 eggs at a time, rinse, pat dry, then slice in half. Place the cooked yolk in a mixing bowl and the white halves on your serving platter.</span><br />
<span style="font-family: Verdana, sans-serif;"></span><br />
<span style="font-family: Verdana, sans-serif;">Now for the mix, I apologize I don't have actual measurements. But it's determined by how many yolks you are mixing up. I make mine very simple. I use mayonnaise, a little bit of mustard and a little bit of vinegar juice from pickles, or pickled vegetables. First mash the yolks with a fork, then add the mayonnaise, mustard and juice. You can add the amounts slowly so they are not too runny. </span><br />
<span style="font-family: Verdana, sans-serif;"></span><br />
<span style="font-family: Verdana, sans-serif;">I like putting the egg mixture in my Pampered Chef tool that I use for frosting. It's quick and easy to fill the whites. For this potluck I wanted to be creative so I topped the eggs with jalapeños, sun dried tomatoes, cucumber slices, black chopped olives and slices of green olives. Be creative. </span><br />

Mix cake mix (dry), butter, remaining milk and nuts. Spread half of the dough (about 1 1/2 cups) in ungreased 9 x 13 pan. Bake 6 minutes; remove from oven. Sprinkle chocolate chips and coconut over baked layer. Drizzle caramel over chocolate chips and coconut. Drop remaining dough by teaspoonful's over caramel layer; spreading evenly. <span style="font-family: Verdana, sans-serif;">4 C powdered sugar</span><br />
<span style="font-family: Verdana, sans-serif;">1 can sweetened condensed milk (15 oz.)</span><br />

<span style="font-family: Verdana, sans-serif;">Soften the butter and mix in the coconut, vanilla and powdered sugar. Stir together then pour the sweetened condensed milk over the mixture. Mix with a wooden spoon as best you can. I then take one hand and just squeeze it all together until it's all mixed. It will be sticky. Put in a container with a lid, or a gallon Ziploc bag and refrigerate a couple of hours or overnight. Then pull off small pieces and roll them into balls. You can either dip the whole thing in melted chocolate or just put some chocolate on the top. I then put them in the small paper cups and cover with saran wrap. You could also store in Gladware containers. I keep them in the garage where it's cooler. You can also leave the mix in the fridge for a number of days. These are very delicious and melt in your mouth.</span><br />

<span style="font-family: Verdana, sans-serif;">Melt butter in heavy 3 quart saucepan. Add sugar and a dash of salt; stir thoroughly. Stir in corn syrup; mix well. Gradually add milk, stirring constantly. cook and stir over medium heat to firm-ball stage (245), 12 to 15 minutes. Remove from heat; stir in vanilla. Pour into buttered (or parchment paper lined) 9 x 13 pan. Cool and cut candy into squares. Cut smaller squares if dipping in chocolate. Bigger squares can be wrapped in waxed paper or saran wrap. </span><br />

<span style="font-family: Verdana, sans-serif;">The caramels do take a long time to cook, be patient. The recipe recommends cooking to a firm-ball stage but I like to take them off in between soft-ball (234) and firm-ball (245). If you do not have a candy thermometer you can use the cold water method.</span><br />

<span style="font-family: Verdana, sans-serif;">Put a small amount of cold water in a small dish, drop a little bit of caramel into the water. Use your fingers to see if the caramel holds together and how firm it gets in the water.</span><br />

<span style="font-family: Verdana;">The caramel can also be used for popcorn, cook only to soft-ball then pour over 2 batches of hot air popped popcorn.</span><br />

Pour over the chocolate, let sit for 2 minutes. Then stir until chocolate is all melted. If not melting or too thick add a little more heated cream. Place chocolate in fridge for a couple of hours or overnight. Then spoon it out and roll into small balls. Put these back in the fridge to set. Then dip in chocolate. There are many other things you can add to truffles and many other recipes you can find online.</span><br />

Not only have I done a ton of cooking but I've also taken lots of pictures of food. Today I'll share a modified banana bread recipe that I made today.<br />

I have always baked banana bread in a square cake pan. I like more browned surface and it always is done in the center without ruining a loaf by taking it out of the oven to soon. The recipe I made today I modified to use honey and <a href="http://www.xlear.com/xylitol-products-ppc2/?gclid=CMy1_ry5s7sCFQ3hQgodR2wAcg" target="_blank">Xylitol</a> in place of white sugar. It's also a recipe from an old church cookbook from probably the 1970s. I think those are still some of the best recipes.<br />

Banana Nut Bread Muffins<br />
1/2 C. butter<br />
1 C. sugar (or 1/2 C honey and 1/2 C Xylitol) (I think you could also cut the sugar back to 3/4 C without any problems.)<br />
2 eggs<br />
3 mashed ripe bananas<br />
1/2 to 1 C. chopped nuts<br />
1/4 tsp. baking soda<br />
1/2 tsp. salt<br />
2 tsp. baking powder<br />
2 C. flour<br />
<br />
Preheat oven to 350 degrees. In small bowl mash bananas and set aside. Place softened butter in mixing bowl. Mix butter and add in sugar and eggs. Mix well. Add bananas and nuts. Sift flour, salt, baking powder and baking soda. Add the flour mixture to the creamed ingredients by thirds and mix well. Bake in greased muffin tins, loaf pan or cake pan. Loaf pan takes about 1 hour, muffins about 25 minutes and cake pan about 30 minutes. When done they should be browned. Test center to be sure they are cooked through. Optional topping before baking: melt about 1/4 C butter, add 2 T sugar, 1/4 C uncooked oats, and a few chopped nuts. Mix all together and spoon over batter.<br />
<br />
Notes: today I forgot to add the baking powder and they were smaller than normal, but no impact to the flavor. I also used 1 3/4 C white flour and 1/4 C whole wheat flour. Original recipe calls for 1 C mashed bananas, but who is going to measure that out? I used a small Bundt pan and an oversized cupcake pan. The Bundt pan worked best with spray oil and no flour or cocoa powder. Let the pan cool before turning it upside down and let it sit upside down before trying to remove. My ganache should have been just a little bit runnier so that it would drip down the sides. I guess I was impatient. But it doesn't affect the taste.</span></span><br />

temperature. </span><br />
<span style="font-family: Arial;">Preheat an oven to 325 degrees F. Grease the
Anniversary Bundt Cake Pan and dust with cocoa powder; tap out the excess. </span><br />
<span style="font-family: Arial;">To make the cake, in a bowl, combine the 1
cup cocoa powder and the chocolate. Add the boiling water and whisk until the
chocolate melts and the mixture is smooth and blended. Set aside. </span><br />
<br />
<span style="font-family: Arial;">Over a sheet of parchment, sift together the
flour, baking soda and salt. <span style="font-size: small;">(I <span style="font-size: small;">just used a <span style="font-size: small;">small mixing bowl<span style="font-size: small;">.) </span></span></span></span></span>Set aside.<br />

<span style="font-family: Arial;">In the bowl of an electric mixer fitted with
the flat beater, beat the butter on medium speed until smooth and creamy, 30 to
45 seconds. Reduce the speed to low, add the brown sugar and beat until
blended. Increase the speed to medium and continue beating until the mixture is
light and fluffy, about 5 minutes, stopping the mixer occasionally to scrape
down the sides of the bowl. Add the eggs a little at a time, beating until
incorporated before adding more and stopping the mixer occasionally to scrape
down the sides of the bowl. Beat in the vanilla until incorporated, about 1
minute. </span><br />
<br />
<span style="font-family: Arial;">Reduce the speed to low and add the flour
mixture in three additions, alternating with the sour cream and beginning and
ending with the flour, beating just until blended and no lumps of flour remain.
Slowly pour in the chocolate-cocoa mixture and beat until no white streaks are
visible, stopping the mixer occasionally to scrape down the sides of the bowl.
Using a rubber spatula, gently fold in the chocolate chips. </span><br />

<span style="font-family: Arial;">Pour the batter into the prepared pan,
spreading the batter so the sides are about 1 inch higher than the center. Bake

This is the same recipe she used and it's also found in my 1970s Better Homes and Gardens Encyclopedia of Cooking cookbook. </span><br />

<span style="font-family: Verdana,sans-serif;">I've been making it since I was about 14 years old. It takes time and patience. Be sure and read the note below for caramel sauce and caramel popcorn.</span><br />

<span style="font-family: Verdana,sans-serif;">1 Cup butter</span><br />
<span style="font-family: Verdana,sans-serif;">1 pound light brown sugar (2 1/4 Cups)</span><br />
<span style="font-family: Verdana,sans-serif;">1 Cup light corn syrup</span><br />
<span style="font-family: Verdana,sans-serif;">1 15-oz can sweetened condensed milk (I always use Eagle Brand)</span><br />
<span style="font-family: Verdana,sans-serif;">1 tsp vanilla</span><br />

<span style="font-family: Verdana,sans-serif;">Melt butter in heavy 3 quart saucepan. Add sugar and dash of salt; stir thoroughly. Stir in corn syrup; mix well. Gradually add milk, stirring constantly. Cook and stir over medium heat to firm ball stage (245 degrees), 12 to 15 minutes. Remove from heat; stir in vanilla. Pour into buttered 9 x 13 pan. Cool and cut into candy squares.</span><br />
<span style="font-family: Verdana,sans-serif;"><br /></span>
<span style="font-family: Verdana,sans-serif;">Note: for caramel corn cook until until softball stage (234 degrees) then pour over two batches hot air popped corn kernels; for caramel syrup, remove from heat just before it gets to soft ball stage and store in glass or plastic jars. For sauce, if it's too thick just microwave it very briefly.</span><br />

Heat oven to 350 degrees. Heat caramel and 1/4 C of the milk in saucepan over medium heat, stirring constantly, until caramels are melted and mixture is smooth.</div>

<span style="font-family: Verdana,sans-serif;">To make 6 cups (large muffin tin) mix 4 or 5 eggs with a variety of chopped vegetables. I had some leftover roasted vegetables that worked great. I also added cheese and some chopped up Canadian bacon. I have a tendency to put in too many vegetables and then they overflow. </span><br />

<span style="font-family: Verdana,sans-serif;">Spray the muffin tin with oil then set small corn tortilla into cup. It will crack in the corners and you can overlap it in the pan. Then pour in the egg and veggie mix. I like to top them with a slice of tomato prior to baking. Bake at 350 until egg is set, takes about 30 minutes or so. Run a knife around the tortilla before taking out of the pan, take it out carefully and put on a plate. Serve with salsa and sour cream.</span><br />

I see recipes for smoothies in most magazines. I decided it's time to throw in my 2 cents worth on the matter.<br /><br />I love smoothies for breakfast after my work out. Here is how I make my smoothies and also some fruit options to try. <br />

I use an orange juice blend for my liquid, and add flax seed oil and protein powder. Then I take 1/2 banana (might be fresh or frozen), frozen pineapple chunks, mango chunks and frozen strawberries. That is my basic regular smoothie. <br />
<br />
I do not understand recipes that tell you to add sugar or other sweeteners. Please don't, you don't need to. <br />
<br />
I use a Magic Bullet. It makes one at a time and I love it. A lot of times I make my smoothie the night before, put it in the freezer in a Tupperware cup with a lid. Then the next morning I take it to the office with me and enjoy it. Or I'll make it in the morning before I leave for work.<br />
<br />
They are also good for a snack anytime during the day.<br />
<br />
I have taken mandarin oranges out of the can and put them in a baggie and froze them. Then mixed them with banana and some coconut, that's very good. Sometimes I put in an Activa vanilla yogurt. I like raspberries and use them sometimes, but I don't like the seeds. And I simply don't care for blueberries, but they would be very good in a smoothie. Frozen peaches are also good as are other berries.<br />

The sugar free flavored syrups will also add some fun flavors to your smoothie. </div>

I have used this Breakfast Blend for years. I find it at Fred Meyer's in the health food section. It's on the shelf so I can stock up when it's on sale. I'm a creature of habit and I put the juice in first, then flax oil, protein powder, banana, pineapple and strawberries. Until the cup is full.</div>

I brought it home and today after work I decided I would give it a try. I hadn't gone grocery shopping on Saturday so I needed to go today and I only had to add a couple of items for this recipe.</span><br />

<span style="font-family: verdana;">At the bottom of the Crock Pot is dry roasted peanuts, a lot of them. Then layered on top is 4 kinds of chocolate. Why? Because you can never have too much chocolate.</span></div>

<span style="font-family: verdana;">It's all placed in the Crock Pot and set on low for 3 hours without stirring. Unless you are me and then you poke a spoon into the almond bark to see if it melted. And then after 2 hours you decide it's had enough time.</span><br />
<br />
<span style="font-family: verdana;">Then you stir it all together until it's smooth. Take a small spoonful while it's warm and taste it to make sure it tastes okay. </span><br />

<span style="font-family: Verdana;">2. After 3 hours, stir the mixture with a wooden spoon until smooth. Drop the candy into cupcake pan liners, using about 2 tablespoons per liner. Allow the candy to cool completely before removing the cupcake liners. Makes 30 to 40 (I made 50 and I think they are almost too big.)</span><br />

We used two different recipes and mixed them up by adding peppermint extract and orange extract to some of the mixture.<br />

We made milk chocolate truffles, rolled them in cocoa powder, powdered sugar, chopped nuts and even dipped some in chocolate. We also made a semisweet/bittersweet batch.<br />

Basically there are just 3 steps to make truffles:<br />
1. Mix the truffle center, usually melted chocolate with cream. Let that set up.<br />
2. Shape the mixture into balls.<br />
3. Roll the balls in a coating or dip in melted chocolate.<br />
And I guess the 4th step would be to savor and enjoy, they are delicious.<br />

Sift together first 5 ingredients. Cut in shortening till mixture resembles coarse crumbs. Make a well; add milk all at once. Stir just till dough clings together. Turn onto lightly floured surface. Knead gently 10 to 12 strokes. Roll or pat 1/2 inch thick. Cut with biscuit cutter; dip cutter in flour between cuts. Place on ungreased baking sheet. Bake at 450 degrees for 10 to 12 minutes or till golden brown. Makes about 12.<br />

Puree berries in food processor. Strain and discard seeds, easier said than done. Please tell me the secret to it. </div>

This is what happened with the gelatin; it blobbed the first time so I had to scoop big chunks of it out and add new gelatin to the mix. It involved a lot of utensils. Like I said, need practice.</div>

I was making a dessert for the women's group at church so I was just going for sample test tasting size.</div>

Recipe:</div>

1 envelope (.25 oz.) unflavored gelatin</div>
<div align="left">
1 bag (10 oz.) frozen raspberries, thawed</div>
<div align="left">
1 bag (10 oz.) frozen strawberries, thawed</div>
<div align="left">
1/2 C agave nectar</div>
<div align="left">
1 tsp. vanilla extract</div>
<div align="left">
1 1/2 C nonfat Greek yogurt</div>

In microwave-safe bowl, sprinkle gelatin over 3 T. cold water, let sit 3 min. Microwave 30 sec.; stir until gelatin is dissolved. In food processor, puree raspberries and strawberries 1 min.; strain and discard seeds. </div>

In bowl, combine agave nectar, vanilla extract, gelatin mixture and pureed berries. Stir in yogurt. Divide berry mixture evenly among 8 dessert glasses. Chill 1 hr., or until set. Garnish with chocolate curls and fresh raspberries, if desired.</div>

What I did - I used two 12 oz bags of mixed berries. It took me time to puree the berries, so I would recommend not mixing the gelatin until you are ready to pour it into the mix. Mine was too set and globbed up when I poured it into the berry puree. I took a slotted spoon and pulled it out and redid the gelatin.</div>

I also used 2 smaller containers of yogurt and it worked fine. They were just over 5 oz. each.</div>

Here is the list of goodies I've made in the last couple of weeks.<br /><br />Fantasy Fudge - the one with the Kraft marshmallow cream. Did you know they tried to decrease the 3 cups of sugar a few years ago, and had the recipe on the back of the marshmallow cream jar that way? But then they put it back to the correct 3 cups of sugar, yes pure sugar. I do not add nuts to mine, only because I'm too lazy to chop them up!<br /><br />Caramel Corn and Caramels - using the same recipe, for the caramels you just cook it past the soft ball stage so they set. Then I cut them in squares and wrap them in wax paper.<br /><br />Uncle Dennis' 1 lb of Everything Candy Log - this is yummy and is made with crushed graham crackers, chopped nuts (for this I take the time to chop), cut up dates, miniature marshmallows, then you pour sweetened condensed milk over it all and work it with your bare hands. Then shape into logs and roll into coconut. Then the logs are wrapped in waxed paper and aluminum foil and kept in the fridge. This was my first attempt to make this. Basically it's like making corn tortilla's with a few extra ingredients and then after they have been on the comal they are fried in oil.</div>

I used chorizo. My gordita's did raise a little bit and we could open them to fill them. We also split them in half and ate them like tostados. We used what I had on hand, which was cabbage, lettuce, cheese and pinto beans. </div>
